Essentially what I would like to be able to do is list and update Microsoft Defender for Cloud settings for Azure SQL Servers and their databases

Describe alternatives you've considered
This is possible with Azure Powershell but not Azure CLI Get-AzSqlServerAdvancedThreatProtectionSetting (Az.Sql)
Update-AzSqlServerAdvancedThreatProtectionSetting (Az.Sql)
