Update vignette to reference new docker-compose.yml location within FederatedMethods organisation

Problem

The vignette deploy-local-datashield-server-with-opal.Rmd currently instructs users to use the docker-compose.yml from OllyButters/datashield_pcr, but this file will soon be moved to a repository within the FederatedMethods organisation, and may also be renamed.

Suggested Change

• Update all references in the vignette (vignettes/deploy-local-datashield-server-with-opal.Rmd) that point to datashield_pcr or its docker-compose.yml to the new repository and location within the FederatedMethods organisation once it is available.
• Adjust any instructions, links, and command-line code blocks to use the new repository name and path, especially if the repository is renamed.
• Ensure documentation is kept up to date so new users within the FederatedMethods community are not directed to the outdated location.

Context

This change will help keep documentation consistent with the new, centralised location of docker-compose-based DataSHIELD deployment in FederatedMethods.
