Update DEPLOYMENT.md to document all local stores

**Problem:** DEPLOYMENT.md's "expected layout" section lists only a subset of the miner's real local SQLite stores — an operator following it would miss most of their own state on disk.

**Area:** AMS / Docs

**Proposal:** Update the documented layout to list every real store the package creates.

**Deliverables:**
- An accurate, complete "expected layout" section.
