Create a documentation

### Description

This repository doesn't contain right now documentation explaining how to use the theme.

If something is created as HTML documentation:
- deploy it via GH pages
- update `site_url` in `mkdocs.yml` (and maybe other files) so that we mention a documentation link when ready
