Auto bump the Chart version when updating the appVersion

When updating the default Docker image (appVersion) of a chart with .github/workflows/new-version.yaml, we should also bump the chart's version. Otherwise the chart is not released when the PR gets merged.

No, currently, the new-version workflow updates the appVersion, but does not bump the version.
