See [here](../blob/1.5.0-1/conf/httpd.conf#L276). It looks like it's a hangover from a early, misguided, attempt to include certificates in the docker image. Clearly an incorrect ServerName is not a fatal issue so, if a value is needed, an obviously dummy one can be provided.
