[BUG] Setuptools no longer includes pkg_resources as of 0.82.0

Describe the bug:
Setuptools has removed pkg_resources which the labeler relies on to find the default labeler packages.
This dependency needs to be removed.

setuptools changed this this past week in 0.82.0

#1202 intends to illustrate an idea of a fix, but it may not be viable for local and remote due to the move of the resources file into the dataprofiler dir when installing

Just in case someone else stumbles upon this and might be spared an epic battle with Docker/Python

Turns out all we need to do is install an even older version of setuptools: pip install "setuptools<81"

Having lots of fun with the DataProfiler, by the way! Almost melted my laptop trying to train the models, lol.
