Consider moving to Debian image

Unfortunately Red Hat has taken more draconian steps to lock out downstream providers like AlmaLinux. It might be wise to switch to a truly open distribution that will not be impacted.

If I remember right we had tried that once but musl instead of glibc caused issues and I think there were also problems with ARM64. The latter looks resolved gliderlabs/docker-alpine#304

JDK musl support also improved: https://openjdk.org/jeps/386
And OpenDAL also seems to support musl. So could be worth a try.

If someone does some testing and creates a PR I think we could merge it
