Upgrade node version to a non EOL version

Whenever we run the task of this repository we obtain the following error

Describe the solution you'd like

This would be great to use a node version that wouldn't trigger this warning. Best case scenario would be to use the current Node LTS.

Describe alternatives you've considered

As a workaround, the only option I see is to be able to silence these warnings, but I didn't find any ways to do this. If I miss something do not hesitate.

I'm thinking we just remove verison 16, and bump the major version.

Appreciate we have had the festive period but was wondering if there is any update on this as I cant see a new version to use?

I need @pippolino to fix the pipeline. Then it should be able to be merged. If he's not active anymore, we'll need a new place to host the build pipeline.
