Remove ampersands from text

There might be some confusion because some people might copy and paste and the browser rendered version of the catalog turns & into & characters.

Best to avoid the issue entirely by saying "Standard and Poor's" instead of S&P etc.

We decided NOT to address this for now - we're not sure if it's really an issue, and the official name of the company is S&P Global, not Standard and Poor's.
