Basic concepts Router explanation: explain "Weight Matrices"

At https://docs.itinero.tech/docs/itinero/basic-concepts/router.html, both the "Routing" and "Weight Matrices" sections start with the same sentence. The term "Weight Matrices" in itself does not make it really clear what it's for, more explanation would be good.
