Replace references among public config data models

We want to:

1. Remove the ensIndexerPublicConfig filed from the EnsApiPublicConfig data model.
2. Remove the ensRainbowPublicConfig filed from the EnsIndexerPublicConfig data model.

Instead of these direct references, we can leverage the EnsNodeStackInfo data model comprises of public config data model for each ENSNode app.
