TARGETARCH not getting populated on M1 mac #17

Hi @oehrlis
on my M1 mac the ${TARGETARCH} is not getting auto populated during the build process.
not sure if it's related due to my setup:
macos sequoia
with docker and colima.
tried some things with explicitly setting the architecture etc without luck (yet)
could provide some debug logs as well if you're interested in.
just doing some debugging to hopefully overcome the issue
