Doesn't work with COS Optimized Images in GKE #656

Steps To Reproduce
I was getting an error about too many symlinks and after debugging, it's related to the image.
I successfully have 7.4 of serversideup running and when I bump it to 8.5 and try to deploy to GKE it fails. I ended up building my container from scratch and I'm live on 8.5 now, but I'd like to use serversideup to be compatible with other images.

serversideup/php:8.5-fpm (i believe many have this issue though)
