Add pipeline documentation for new read timeout variable

The new read timeout variable should be documentet in the examples of the pipeline section of ./stackrox-container-image-scanner/README.md. Please note that in the Freestyle section it is labeled as "timeout" which is not the correct pipeline function variable. It should be "readTimeoutSeconds".
