Update to 1.21.10

Since we are still on 1.21.8, might be nice to move up to 1.21.10 in preparation for version 26.0 (new versioning scheme). I'm pretty sure we are still using 1.21.1 registries too lol.

I think we should wait for #5 to be implemented first, a lot of the codebase won't need to change much outside of the registry files changing.
