Updates the plugin release to 1.0.8 by bumping version references across the plugin (blockparty-modal.php, readme.txt, package.json/package-lock.json, .plugin-data, and the block block.json).

Updates the WordPress Playground blueprint to install the 1.0.8 tag and adds/updates changelog entries documenting the release; src/blockparty-modal/block.json also gets minor JSON formatting changes (no functional behavior change).
