This PR will merge changes taken from the profsea-climate branch into ProFSea main. This is a re-write of ProFSea into a more modular, flexible and fast model.

We'll also add documentation to this branch which will be merged and deployed with the rest of the code.

We could just rename profsea-v3 to main, since there is no common code between two branches, and rename current main to ukcpv2 or something like that. It might be easier than resolving merge conflicts.

Yeah I quite like this, and we can just set it the new main as the default branch?
