Switch to Shiki Rehype plugin

This works roughly, but the code blocks are still regressed a bit:

• Incorrect background color
• No "titles" or line numbers (the attributes aren't even being exported into the HTML element, so impossible to implement ourselves without some upstream changes?)
• No copy and try it buttons
