docs: validate kebab-case anchors for AsyncAPI spec v3

This is a draft PR created to validate that the kebab-case anchor changes
introduced in asyncapi/spec#1148 do not break website navigation.

• Applies the same anchor updates to spec v3.0.0
• Removes the manual Table of Contents (website builds it automatically)
• No content or semantic changes

This PR exists only for validation and preview purposes.

Netlify preview fails during Next.js prerendering of
/docs/reference/specification/v3.0.0 with a ReferenceError (channelId is not defined).

All markdown/MDX checks pass, and no website logic was changed, so this appears
unrelated to the anchor or TOC updates. Happy to investigate further if helpful.
