Update profile README with multi-platform positioning#8

Reflects current Cloudback scope (GitHub, GitLab, Azure DevOps, Linear), SOC 2 Type II compliant phrasing, RSA Lockbox / CMEK encryption, self-service restore including cross-platform restore, accurate notification channels (webhook + failure-only email), and the Terraform / Operations API / MCP automation surface.
