docs: move STORE_LISTING.md into docs/#81

Group the store listing copy with the other markdown docs (CONTRIBUTING, SECURITY, etc.) to keep the repo root tidy. Update the relative link in docs/DOCUMENTATION.md so it still resolves. No listing content changes.
