Ouch, this upgrade reveals some incompatible change in jackson that is breaking wiremock:

Obviously jackson cannot be updated without also updating jackson-databind.
Fun fact is that all jackson dependencies that we define are versioned via dependencyManagement and the latter is using one variable for all Jackson artifacts and that variable was updated by dependabot in this PR.

So it seems that Jackson 2.19.0 is slightly broken.
