fix: enhance error handling for insufficient scopes in project board script

Enhanced error handling and user guidance:

• Added a check for the INSUFFICIENT_SCOPES error when querying the GitHub API, with a clear message explaining that the user's token lacks the required read:project scope, instructions for resolving the issue, and a display of the current token scopes.

Minor usability improvements:

• Updated the usage instructions to include an example written to results.txt for easier reference.
