docs: add redaction-race demo videos, move Bench to top of README#4

Add demo/ — a two-pane "redaction race" that visualizes the Bench throughput numbers: each engine streams the same document at its real measured tok/s and redacts PII spans (real pf-cli --classify output) as it finds them, scrolling a page at a time with live token/entity counts. Two scenes: CPU 8k-token doc (real time, both finish, 7.7x) and GPU 132k-token doc (4x slow-mo, HF OOMs at the 16 GiB wall, ours runs flat). Rendered with rich, recorded headlessly via recorder-for-agents; corpora built by gen_corpus.py from real token counts (pf-cli --tok-batch). Move the Bench section directly under the intro and embed the clips (GIFs inline, full-quality MP4 links). Co-Authored-By: Claude Opus 4.8 (1M context) <noreply@anthropic.com>
