This PR adds support for InkHud on the LilyGo T-Echo Plus

I've tested this builds and flashes fine on the device with latest develop, I don't have any other eink device to compare with though. Config was copied and adapted from the standard T-Echo.

Happy to test anything specific on device, I've been running it on the device for a week and tested a fresh build today.
