docs: move to rumdl markdown formatter#350

mdformat only formats and needed an extra plugin for GFM support. rumdl lints and fixes in one tool and keeps its rules in a small config file in the repo, so things like line length and per-file ignores are explicit. The doc changes come from running the new hook and fixing what it flagged.
A single screenshot only looks right on one GitHub theme. Using a picture element with prefers-color-scheme sources lets readers see a dark or light screenshot matching their setting. The old standalone image goes away, and its REUSE annotation with it, since the new files live under the screenshots folder that is already covered by an existing annotation.
