Converting trainer to PyTorch Lightning module

Convert the train and infer scripts to use lightning which improves I/O capabilities and merges the UNet and patch discriminator into one model + checkpoint.

Pending tasks:

• test training script
• test model saving/loading
• clean up transfer learning module
• change inference script to use new checkpoints
• test inference
• stretch: create one-shot inference
