docs(tier): correct large-tier galaxy count to 2.5M#171

Several docstrings, copy strings, and the OG image referenced "3.5M galaxies" or "~3.5M ops" for the large-tier catalog. The actual loaded count today is ~2.5M (SDSS large + GLADE large + 2MRS + Famous). Update all live references; completed plans/specs and historical outreach emails are left intact as point-in-time artifacts. Touches CLAUDE.md, README.md, Tier docstring, two utils docstrings, the catalog transfer module's docblock, and the OG image's footer text. Co-Authored-By: Claude Opus 4.7 <noreply@anthropic.com>
