[WIP] Update author in file header blocks from 'Aaron Clauson' to 'Copilot'

Original description:

Update all file header blocks in the repository to change the author from 'Aaron Clauson' to 'Copilot'.

• In every file where the header contains 'Author(s):\n// Aaron Clauson (aaron@sipsorcery.com)', replace it with 'Author(s):\n// Copilot'.
• Preserve all other elements of the file header, including history and license.
• Apply this change to all files in the repository.
• Ensure consistency of formatting.
• Add a note in the PR description stating that this is an automated author update requested by the user.
