fix: correct LICENSE to Apache-2.0 (was stale MIT) - #102

The LICENSE file was MIT with 'Copyright (c) 2024 Truffle Contributors' while the README badge, README license section, and CITATION.cff all declare Apache-2.0. Replace with the Apache-2.0 text (matching spawn/lagotto), Copyright 2025-2026 Scott Friedman. Resolves the license-metadata mismatch flagged in the 2026-07 external review (spore-host#441).
