This change modifies the Windows launch and stop scripts to handle the MediaMTX proxy natively instead of relying on Docker. Due to Docker for Windows' limitations with network_mode: "host", the backend was unable to dynamically provision camera paths over the local REST API.

Now, launch-all.bat automatically downloads the latest specified release of mediamtx from GitHub, builds a YAML configuration that mimics the init-secrets container output, and launches it in the background before spinning up the remaining Docker stack. stop-all.bat will shut down the executable when taking the stack down. Documentation was updated accordingly.

- Updated `dist/release/stop-all.sh` to correctly terminate the native macOS process when shutting down the stack.
- Updated documentation in `README.md` and `SYSTEM_ARCHITECTURE.md` to clarify the macOS native binary fallback capability.
