docs(readiness): align launch claims with current truth

Refreshes the repo-local Studio/demo narrative so it surfaces the current IVR route-matrix proof after the latest merged voice-routing work.

This PR updates the demo package to highlight:

• Press 1 renewal/new-patient/veteran conversion flow
• Press 2 annual Florida/MMU state-card separation from seven-month doctor renewal
• Press 3 deterministic after-hours classifier
• Press 4 hidden staff-controlled reschedule posture
• Separate staff-confirmed cancellation lane
• Payment-safe routing boundaries
• Route-boundary regression evidence and CI-green proof
